Complex and deep flavor profile, with incredible winey strawberry acidity and nougat/chocolate candy sweetness. This is an incredibly special coffee, and definitely one you don’t want to miss!
The Cauca department of Colombia is home to hundreds of farms, though most of which measure only a few hectares! The Cafe del Cauca series is our effort to highlight the work of these small farms and the incredible and varied coffees they produce. Every year the Colombian Coffee Federation organizes a regional competition, with nearly 300 submissions this past year. The top 20 coffees were selected by a panel of judges (including our roastmaster Sean) and sold at auction, with 100% of the premiums going directly to the farmers. Victor’s coffee took 3rd place, and we’re thrilled to be able to share it with you!
Victor has grown up working in coffee, managing his farm alongside his parents and siblings. We visited late one day and were immediately struck my the tranquility of their farm, which is nestled in one of the rugged valleys on Piendamó. Their meticulous attention to detail yields incredible coffees, including a unique solar dryer with a mesh floor suspended just above the ground that allows for extra airflow and consistent drying.
