The Cauca department of Colombia is home to hundreds of farms, though most of which measure only a few hectares! The Cafe del Cauca series is our effort to highlight the work of these small farms and the incredible and varied coffees they produce.
Like many farmers, Ramiro and his community were heavily affected by the coffee rust epidemic in the region in the early 2000's. With the help of the University of Cauca they learned about microbiology, and began producing their own natural fungicides and fertilizers, which work in harmony with the ecosystem while also being more affordable than their chemical equivalents. Cherries are meticulously handpicked, and washed three times before drying on raised beds for 15 days. The result is a clean, sweet, coffee with amazing syrupy sweetness!
